Short description: A legume, little known, but without a shadow of a doubt one of the tastiest that exists, the Cicerchia. It is a typical legume of central and southern Italy, cultivated and widespread since the Europe of the ancient Egyptians, in fact, it was used for the preparation of focaccia, bread and hot soups. The flavor of the cicerchie is very similar to that of chickpeas, but even more delicate. They can be eaten both cold and plain, but also to enrich summer salads, to make tasty soups and purees. This legume is a real cure-all especially for heart and bone health. Method of preparation: a long soak in warm water with the addition of salt. The cooking times are quite long, perhaps using a pressure cooker can facilitate and reduce the times.
