From the knowledge of the ancient method of food production, Domus Vergilius seeks innovation while respecting tradition and craftsmanship. Inspired by the praise of the serene rural life to the sacredness of the work of the great poet Virgil, we took the invitation to seek the good in the simplicity and raw materials of our land.
Cima di Rapa commonly known as "Friariello" is a typical Neapolitan vegetable with an intense and slightly bitter flavor. In this preparation it is reworked in the form of pesto in order to enhance its use in Mediterranean cuisine.
The product has a solid-creamy consistency with possible presence of oil veins visible to the naked eye. The green color recalls that of the initial leaf.
This product is obtained using a specific variety of broccoli grown in the Vesuvian area which undergo a shredding phase with the addition of ingredients such as sunflower oil and subsequent potting inside glass jars, and then undergo a pasteurization process.
Given its particularity, this product lends itself very well to being used as condipasta, (as it is or in association with other ingredients: such as pork sausage). It is used as a base for the filling of pizzas, bruschetta, croutons and saltimbocca or as a filling for rotisserie products such as crocchè, pasta omelettes, fillings etc. Also recommended in combination with cheeses such as smoked scamorza.
All the products made by the Vergilius srls company are subjected to a series of checks during all stages of the production chain (cultivation and treatments in the field, harvesting, processing and storage). The finished products are subjected to chemical, microbiological and physical analyzes in order to guarantee their sanitary quality.
