“Le pacchetelle” ancient method of preservation in which whole hand-picked tomatoes are cut into two parts (pacchetelle) and introduced manually, with extreme care, by lightly pressing, into glass jars.
A stabilization phase follows by means of a thermal pasteurization process without adding flavorings and preservatives.
This method of preparation and conservation preserves all the typical organoleptic characteristics of the tomato intact.
