Short description: caprettone is a white berried variety which probably owes its name to the particular shape of the bunch, which can recall the goat's beard. It has only recently been recognized as a vine with its own specific genetic and productive profile, typical of Vesuvius. The bunch is quite tight, with medium-sized berries, thick skin and elliptical shape.

Type of grapes: 100% Caprettone, guyot, ungrafted.

Production area: 350 above sea level Alto Tirone, Vesuvius National Park.

Vinification: manual selection of the grapes, de-stemming and draining of the must after 48 hours, fermentation at a controlled temperature for 24 days.

Aging in bottle for 30 months on the lees.

Disgorgement: in the spring of the 3rd year after harvest.

Tasting notes: bright straw yellow color. Fine and persistent perlage. On the nose, floral hints of broom and white flowers, with fragrant notes of bread and white-fleshed citrus fruits. Elegant and fresh on the palate, of great structure, with a long and mineral sip.

Alcohol volume: 12.5% Vol.

Serving temperature: 10-12° C.

100% Caprettone, guyot, ungrafted. The caprettone is a white berried variety that probably owes its name to the particular shape of the bunch, which can recall the goat's beard. The vinification takes place with manual selection of the grapes, de-stemming and draining of the must after 48 hours, fermentation at a controlled temperature for 24 days. The refinement, on the other hand, is carried out in the bottle for 30 months on the lees. Disgorgement in the spring of the 3rd year after the harvest. The tasting notes refer to a bright straw yellow wine. Fine and persistent perlage. On the nose, floral hints of broom and white flowers, with fragrant notes of bread and white-fleshed citrus fruits. Elegant and fresh on the palate, of great structure, with a long and mineral sip.

Serving temperature: 10-12° C.

The winery is one with the family home: built below it, it benefits from the specificity of the volcanic rock of the last great eruption of Vesuvius, allowing a temperature and humidity that is naturally favorable for winemaking.

In this place, you can get to the heart of production, discover its secrets, follow step by step the slow and meticulous processes that lead from the grape to the wine ready for the bottle.

Here, day after day, this cycle is renewed, skilfully mixing the tradition of “making” acquired over time and the most advanced production technologies, such as winemaking systems with steel tanks, large French oak barrels and tonneaux.

The structure is the nerve center of the business, in perfect dialogue with the vineyards surrounding the house and the space dedicated to welcoming wine lovers.
